This is one of my FAVORITE family clean-eating meals, and I usually will double or triple the recipe if we want leftovers or meal prep for the week. Chicken cashew lettuce wraps are a simple and easy meal that you can either make ahead or eat right away. It’s great for a light lunch or dinner as a wrap, and add some raw veggies for some clean sides. You can also eliminate the cashews and just have chicken lettuce wraps, or eliminate the lettuce and have chicken over rice. It is a crowd pleaser at our house with how versatile it is. Step 1 – THE SAUCE.
For the sauce: Mix all ingredients into a sauté pan, heat until sugar dissolves.
2 Tbsp soy sauce
1 Tbsp rice vinegar
1 Tbsp brown or raw sugar
1 tsp sesame oil
1/4 tsp ground ginger
1/4 tsp cayenne pepper
STEP 2 – THE CHICKEN.
Cooking ingredients:
1 lb ground chicken
1 Tbsp vegetable oil
1 yellow onion, diced
1 cloves garlic, minced
1 tsp soy sauce
Stir fry sauce mixture from step 1
1/4 cup cashews, chopped (eliminate for nut-free)
salt and pepper to taste (optional)
Lettuce leaves for serving- romaine, green leaf, or butter leaf preferred
Cooked rice for serving – optional
Cooking directions:
- Heat oil in pan over med-high heat. Cook onions and garlic until translucent, then add chicken. Brown chicken, approximately 4-5 minutes. Add soy sauce to pan and cook 1-2 minutes.
- Once chicken is cooked through, add stir fry sauce and cashews. Sauté a few minutes until all is hot and ready. Remove from heat and serve on lettuce leaves. This is also tasty served over rice, or combined with rice in a lettuce wrap.
